I have questions , during the ganache , why we mix the ingredients on specific order , what are the affects? Wwere do we keep the ganache to rest to get hard , the fridge? the freezer? After the bonbon's are ready where to store them and how many days and what conditions?

A very detailed course but easy to follow. The are bon-bons following the recipe are awesome.
I would have liked to learn more about why each specific temperature was important. It seems like there is a system for certain temperatures with certain things, but there wasn't much explanation about why those temperatures are necessary.
